Waffles

Yield
6 Waffles
Ingredients
1 3⁄4 c flour, cake (sift before measuring.)
2 t double-acting baking powder
1⁄2 t salt
1 T sugar
3 egg (separate yolk and whites)
2 T butter (melted. Or use vegetable oil)
1 1⁄2 c milk
Instructions
  • Sift four
  • Resift flour with baking powder, salt, and sugar
  • In separate bowl, beat eggs well, add butter/oil and milk, mix.
  • In dry ingredients bowl
    • Make a hole in center of dry ingredients
    • Pour in liquid ingredients
    • Combine them with a few swift strokes
    • The batter should have a pebble look, similar to muffin batter
  • In squeaky clean bowl, beat egg whites until stiff but not dry
  • Fold egg whites into the batter until they are barely blended
Notes
  • preheat waffle iron before gathering ingredients
  • If using with savory foods, omit sugar
  • We often substitute all-purpose flour for cake flour. Works fine.
  • Per Joy of Cooking, can add one of the following:
    • 1/2 cup fruit, berries, or grated semisweet chocolate
    • 1/4 cup raisins, pureed dried fruit, finely chopped nuts or coconut
